If you have already prepared Onion Koji, here’s a simple recipe to make the most of its flavor. Another creation by Yuhi Che – many thanks!
Ingredients:
- Squid – 1 whole
- Onion Koji – 2 tbsp
- White wine – 1 tbsp
- Lemon – 1/8 piece
- Rice flour – 2 tbsp
- Oil for frying
Method:
- Cut the squid into rings.
- Mix the onion koji with white wine.
- Marinate the squid in this mixture for at least 1 hour.
- Coat the squid rings in rice flour.
- Heat oil to 175–180°C and fry the squid until golden.
That’s it! Squid rings go wonderfully with a vegetable salad, but they’re also great with a potato side dish.
