Fried calamari with onion koji

If you have already prepared Onion Koji, here’s a simple recipe to make the most of its flavor. Another creation by Yuhi Che – many thanks!

 

Ingredients:

  • Squid – 1 whole
  • Onion Koji – 2 tbsp
  • White wine – 1 tbsp
  • Lemon – 1/8 piece
  • Rice flour – 2 tbsp
  • Oil for frying

 

Method:

  1. Cut the squid into rings.
  2. Mix the onion koji with white wine.
  3. Marinate the squid in this mixture for at least 1 hour.
  4. Coat the squid rings in rice flour.
  5. Heat oil to 175–180°C and fry the squid until golden.

 

That’s it! Squid rings go wonderfully with a vegetable salad, but they’re also great with a potato side dish.
