A very interesting and original recipe prepared for us by Yuhi Che, who has been living in the Czech Republic for several years and is currently working on a cookbook of simple Japanese recipes adapted for our kitchens. We are honored that she chose Kojibakers products and cooks with them.
Ingredients:
- Any fruit you like
- Shiokoji (1% of the fruit's weight)
- Sugar or honey (10% of the fruit's weight)
Method:
- Wash the fruit and cut it into pieces if it’s large
- Coat the fruit with shiokoji and let it sit for 30–60 minutes
- Place the fruit in a pot, add sugar or honey, and simmer gently
- Stop cooking once the fruit softens and becomes juicier
- Optionally, you can add lemon juice at the end
This sauce is great for various dishes, salads, pasta, or can be added to yogurt or tea!
