We recently introduced you to Tomato Koji, and this time, Yuhi Che has prepared a delicious recipe using this fantastic ingredient.
Hayashi is a type of Japanese stew, typically made with beef, but it can also be made with pork.
Ingredients:
- Slices of beef or pork – 250 g
- Onion – 1 piece
- Mushrooms of your choice (this recipe uses Shimeji) – 200 g
- Tomatoes – 3 pieces
- Olive oil for frying
- Rice flour – 2 tablespoons
- Water – 300 ml
- Tomato koji – 2 tablespoons
- Miso of your choice – 1 teaspoon
- Shiokoji – optional, for marinating the meat
Method:
- Salt the meat and let it rest for 10 minutes (or rub with 2–3 tablespoons of shiokoji and marinate in the fridge for 6–12 hours)
- Cut the onion, tomatoes, and mushrooms into pieces
- Sauté the meat and onion in a pan with olive oil
- Once cooked, add the mushrooms and tomatoes along with the rice flour and stir
- Add water, tomato koji, and miso
- Cover and simmer over medium heat for 10–15 minutes
