Cauliflower mushroom and miso emulsion

We love mushrooms and enjoy exploring even the less common varieties, their flavors, and uses. This simple and flavorful recipe by Martin Baránek, sous-chef at Olomouc’s Entrée restaurant, fits perfectly here. Definitely give it a try!

 

Ingredients:

  • Aka soy miso – 3 tbsp
  • Mustard – 1 tbsp
  • Nut butter – 10 tbsp

Miso Emulsion Method:

  1. Whisk the butter, mustard, and miso together in a bowl.
  2. Optional: garnish with herbs.

Caesar Mushroom (Kotrč) Method:

  1. Clean the cauliflower mushroom of any dirt, rinse with water, and pat dry.
  2. Using a salad spinner is optional to remove excess water.
  3. Season with salt and sauté in butter until golden brown.
