Marinated persimmons with shiokoji

This exotic fruit can be found in most stores today, and if it has caught your eye and you’re wondering what to make with it, we offer a simple recipe from Yuhi Che, who has been blending Czech and Japanese flavors for many years.

 

Ingredients:

  • Persimmon – 1 piece
  • Shiokoji – ½ tsp
  • Onion – ½ piece
  • Vinegar (here we used apple vinegar, but you can use any vinegar or balsamic)
  • Black pepper – to taste

 

Method:

  1. Cut the persimmon into bite-sized pieces
  2. Slice the onion
  3. Mix the persimmon, onion, shiokoji, and vinegar together
  4. Season with black pepper to taste

 

This works as an interesting dessert or can be enjoyed on its own.
