A perfect Japanese-style miso soup by Daniela Bystrická, where you will use our miso and tamari. The soup not only tastes great but also satisfies and can easily be served as a main course.

Miso Soup
Ingredients:
- Water - 500 ml
- Katsuobushi (dried tuna) - 20 g
- Shiro miso (chickpea) - 2 tbsp
- Kombu seaweed - 3 cm piece
- (Fish sauce or Garum for seasoning - 1 tbsp)
Method:
- Boil Katsuobushi (or Bonito) in water
- Then let it steep (a few minutes)
- Strain
- Add Miso (do not boil anymore) and season with fish sauce or garum if needed, you can also use lemongrass or grate lime zest.
Salmon in Tamari

- Slice the salmon
- Pour over with oil and tamari
- Let it rest
Serving
I cooked Soba noodles (buckwheat) for the soup, added seaweed and marinated salmon.
It's not in the photo, but a bunch of coriander and spring onions fit perfectly.
