Miso soup with salmon in tamari

 

A perfect Japanese-style miso soup by Daniela Bystrická, where you will use our miso and tamari. The soup not only tastes great but also satisfies and can easily be served as a main course.

Miso Soup

Ingredients:

  • Water - 500 ml
  • Katsuobushi (dried tuna) - 20 g
  • Shiro miso (chickpea) - 2 tbsp
  • Kombu seaweed - 3 cm piece
  • (Fish sauce or Garum for seasoning - 1 tbsp)

Method:

  1. Boil Katsuobushi (or Bonito) in water
  2. Then let it steep (a few minutes)
  3. Strain
  4. Add Miso (do not boil anymore) and season with fish sauce or garum if needed, you can also use lemongrass or grate lime zest.

Salmon in Tamari

  1. Slice the salmon
  2. Pour over with oil and tamari
  3. Let it rest


Serving

I cooked Soba noodles (buckwheat) for the soup, added seaweed and marinated salmon. 

It's not in the photo, but a bunch of coriander and spring onions fit perfectly.
