Okonomiyaki is a type of cabbage pancake that is one of the traditional dishes of Japanese cuisine. It is sometimes nicknamed the Japanese pancake or Japanese pizza. Today, thanks to Daniela Bystrická, we offer you one variant of this delicacy, which includes our miso and tamari.
Okonomiyaki Pancakes
Ingredients:
- Plain flour - 150 g
- White cabbage - 260 g
- Eggs - 2 pcs
- Bacon - 200 g
- Onion - 100 g
- Buckwheat Tamari - 50 g
- Dashi-no moto broth - 220 g
- (Broth - 200 g water + 2 tbsp dashi-no moto)
- Chives
- Oil
Method:
- Combine flour, dashi broth, tamari, and eggs into a batter
- Slice cabbage, onion, and bacon
- Combine the batter with the solid ingredients
- Fry slowly until golden brown, optionally finish baking in the oven
Tamari Chicken Hearts
Ingredients:
- Chicken hearts - 200 g
- Buckwheat Tamari - 100 g
- Mirin - 60 g
Method:
- Clean the hearts, place in a bowl, pour over with tamari and mirin
- Marinate in the fridge for about 12 hours (24 hours won't hurt)
Okonomi Sauce
Ingredients:
- Ketchup - 3 tbsp
- Worcestershire sauce - 1 tbsp
- Honey - 4 tbsp
- Buckwheat Tamari - 2 tbsp
Method:
Heat all ingredients in a saucepan and stir.
Miso Mayonnaise
Ingredients:
- Egg yolks - 3 pcs
- Vegetable oil - 200 ml
- Lime juice - 1 pc
- Chickpea Miso - 2 tbsp
Method:
- Whisk the egg yolks, slowly add the oil
- With constant whisking, the desired consistency is achieved
- While whisking, add the juice from one lime and the miso
Alternatively, you can use a blender and mix everything in it
Serving:
We have the okonomiyaki fried, spread with mayonnaise and Okonomi sauce, quickly sear the hearts in a pan (about 1-2 min), halve them, add them to the okonomiyaki pancake, sprinkle with chives or spring onion.
