Last time we prepared (shio)koji with wild garlic, and today, thanks to Yuhi Che (a native Japanese who has been living in Brno for over ten years), we’ll show you a possible way to use it in a refreshing spring cucumber salad.
Ingredients:
- Cucumber
- Koji with wild garlic
- Lemon juice
- Any kind of yogurt
- Salad oil of your choice
Method:
- Slice or grate the cucumber — whichever way you prefer it for your salad.
- Mix koji with wild garlic, lemon juice, yogurt, and oil.
- Add the mixture to the cucumber.
Easy peasy and absolutely delicious. We highly recommend it as a side dish or as a standalone salad!
