Spring cucumber salad

Last time we prepared (shio)koji with wild garlic, and today, thanks to Yuhi Che (a native Japanese who has been living in Brno for over ten years), we’ll show you a possible way to use it in a refreshing spring cucumber salad.

 

Ingredients:

 

Method:

  1. Slice or grate the cucumber — whichever way you prefer it for your salad.
  2. Mix koji with wild garlic, lemon juice, yogurt, and oil.
  3. Add the mixture to the cucumber.

 

Easy peasy and absolutely delicious. We highly recommend it as a side dish or as a standalone salad!
