The only way to have a healthy breakfast or snack at work was to prepare your own food at home. But where to find the time? And also the desire to do it – let's be honest…

Miso soup is miso (fermented legume paste full of enzymes) mixed with another ingredient.
The origin of miso (and miso soups) is in Japan and more precisely in ancient China. It has been used for over 2,000 years and is one of the oldest dishes of our civilization. It is loved for its taste, shelf life, and health benefits. The basis of fermentation is the noble mold Koji (Aspergillus oryzae, known in Czech as Kropidlák rýžový)
Thanks to Koji, the mixture gains an incredible amount of different enzymes, which are catalysts for various biochemical reactions. During months of fermentation in barrels, they help break down complex proteins, fats, and carbohydrates into simple, easily digestible substances for the body.
And as a bonus, miso adds a great umami flavor. The so-called fifth taste, which our gastronomy is discovering in recent months. The Japanese pour a spoonful of the resulting miso with hot (not boiling) water and drink it in the morning just like we might drink coffee.
... but we're not Japanese...
We're not. Miso just poured with water wouldn't be enough for us.
That's why we adapted miso soups to our environment.
1) We make miso for miso soups from ingredients other than rice and soy (Asian classics). We use Czech peas, barley, millet, chickpeas, ... all in organic quality.
2) We mix miso with ingredients, and the soup is often thicker, with vegetables or mushrooms.
And because we also like Czech flavors, we combined them with the umami world, and in our offer, you'll find national classics, like "česnečka" miso soup with roasted garlic, "zelňačka" i.e., miso soup with fermented cabbage or mushroom with porcini, chanterelles, and champignons.
❓ Why then miso soups from Kojibakers
✔️ Extremely easy preparation
Pour a tablespoon of miso soup with hot water. And stir. And that's it.

To start, try one tablespoon for about 3 dl of water. If the soup is too weak, add more miso soup, if it's too salty, add more water.
We recommend water at 60°C to preserve the maximum enzymes. If you're mainly after the taste, you don't need to worry about the temperature. Even so, you'll do a lot for your body thanks to the prebiotic properties of miso, minerals, and vitamins.
If you're looking for a more substantial meal, we recommend pouring boiling water first over couscous or noodles, letting it cool for a few minutes, and then mixing in a spoonful of your favorite miso soup. Preparation takes 5 minutes and can be done with a kettle or thermos.

"I eat miso because it's healthy. But now I finally like it too“. We've heard this sentence quite often. And not only heard it, we have the same experience ourselves. Japanese misos are just too strong for us and, for example, at home, they stayed in the fridge for months and months… We just didn't like them much.
And we prepare miso soups from our best miso pastes.
✔️ Soy-free (8 out of 10)
„I don't eat miso because I can't / don't want soy“. Another typical sentence we hear. Yes, the origin of miso is Asia, where soy is widely spread, and miso is almost exclusively made from it. But the magic of umami flavor is fermented legume, and we replace soy with peas, chickpeas, or red lentils. It works just as well, and the range of flavors you can create in your kitchen is truly wide, and you can do without soy.
Eight out of our ten miso soups are made without soy, so if you have an allergy or don't like soybeans, we have plenty of alternatives.
✔️ Origin of ingredients
From the beginning, we use ingredients from verified producers, wherever possible in organic quality. And of course, we prefer Czech suppliers. For example, peas, barley, cabbage, red beet, and even shiitake mushrooms are purchased fresh in the Czech Republic, and we dry them ourselves to ensure they are not treated with anything.
And if it's not possible, we stick to European ingredients. For instance, we buy rice in northern Italy, which is closest to us.

„I want to support a Czech company“. „I prefer local products“. This reason makes us the happiest. It was actually one of the impulses for founding Kojibakers and is the reason why we play with local ingredients and have the product offer we do.

Let's quickly calculate it. The average price of 350 g of soup is 184 CZK, the average number of servings you can prepare from a standard jar is 7, i.e., price per serving: 26 CZK.
And to make it more substantial, let's add pasta. The average price of 250 g of couscous is 48 CZK. You can prepare pon average 8 servings from a bag. One serving costs 6 crowns.
So, if we average our soups and couscous, we get 32 crowns per meal portion.
☝️ Do you like to play in the kitchen? Miso soups don't have to be just poured with water...
Miso soup from Kojibakers is more. Because it's flavored miso, it offers you a whole range of other uses in your kitchen:
✅ Miso soup can be used only as a "soup base" that you further complement with noodles, vegetables, cheese, millet, ... simply according to taste. For example, we like couscous. A fantastic pasta that is not boiled but poured with boiling water. After cooling, add a spoonful of miso soup, and that's it. With an office kettle, you'll do just fine.
✅ You can also use our miso soups as a "seasoning" and tweak your dishes directly at the table (e.g., I flavor almost all kinds of soups with garlic miso soup). It's incredible what change a teaspoon of this delicacy brings to a bowl of regular soup, like broth, goulash, or lentil soup.
✅ Salt with miso soup. You can also salt with the flavored mixture wherever you want to add taste alongside saltiness.
✅ But you can use miso soup in other ways. It's also great as a salad, scrambled eggs, pasta, and other everyday dishes. We recently used it in cabbage pancakes.
✅ Or find your own way to use it. Customers repeatedly tell us how they spread it on bread, toast, omelet, or as a salad topping on rice... We've seen kimchi miso soup blended and used as ketchup. Imagination knows no bounds here. And you are the ones who work magic in your kitchen.

Hello, I tried your kimchi soup and it's a great surprise. The result is awesome. However, what the garlic paste did to the soup with chicken thigh, that's something! I defrosted more meat than needed and had to preserve it somehow. I mixed it with garlic "soup" and a spoonful of yogurt (just in case) and the result is something!!!
