Apple koji and "hot-milk drink"

This time, Yuhi Che has prepared a sweet version of koji with apples. During preparation, the koji enzymes break down complex sugars into simple ones, resulting in a sweet mash that you can use as a unique sweetener for baking, as a jam, or even as a marinade for meat.

 

We’re also adding our favorite way to enjoy it — as a warm “hot-milk” drink with cinnamon, which is perfect for cozying up on cold winter days.

 

Apple Koji

 

Ingredients:

  • Apples (cored) – approx. 200g
  • Komekoji – 100g

 

Method:

  1. Mash the apples finely
  2. Mix with komekoji
  3. Place in a clean container or jar
  4. Let it rest for 3–5 days at room temperature (stir once a day) or for 8–9 hours at 60°C

 

And your sweet apple mash, similar to Amasaké, is ready! You can enjoy it on its own or use it as a natural sweetener.

 

Apple Koji “Hot-Milk” Drink

 

Ingredients:

  • Any kind of milk (we prefer plant-based)
  • Apple koji
  • Cinnamon

 

Method:

  1. Warm up the milk, but do not boil it!
  2. Add apple koji to taste
  3. Add cinnamon to taste

 

Simple, yet incredibly delicious!
