Donuts
Ingredients:
- Sugar – 50 g
- Milk – 250 ml
- Yeast – 15 g
- Butter – 50 g
- All-purpose flour – 320 g
- Egg yolks – 2 pcs
- Orange zest – 1 piece
Method:
- Warm the sugar, milk, and yeast to room temperature.
- Melt the butter.
- Grate the zest of one orange finely.
- Sift the flour through a sieve.
- Combine everything into a soft dough.
- Let the dough rise for 1 hour in a warm place.
- After an hour, knead the dough, shape the donuts, and let them rise again for 30 minutes.
- Fry in oil at 170–180 °C.
Miso Pudding
Ingredients:
- Whole milk – 500 ml
- Sugar – 60 g
- Starch – 30 g
- Egg yolks – 3 pcs
- Vanilla pod – 1 pc
- Caramel miso – 60 g
Method:
- Dissolve sugar, caramel miso, and vanilla seeds in 2/3 of the milk.
- Mix the remaining 1/3 of the milk with the starch.
- Slowly bring the milk with sugar to a boil and add the starch mixture; cook briefly.
- Remove from heat and add the egg yolks, stirring constantly until the pudding thickens.
- Let the pudding cool, mix, and fill into a piping bag.
Finishing
Fill the donuts with a generous amount of pudding and dust with powdered sugar.
