Dumpling, chicken, sausage with tamari and kimchi

Filling for Dumplings

Ingredients:

  • Chicken thigh – 1 piece
  • Sausage – half a sausage
  • Garlic – 1 clove
  • Spring onions – 4 pieces
  • Chickpea Tamari – 2 tsp
  • Honey – 1 tsp
  • Smoked paprika – 1 tsp
  • Sesame oil – 2 tsp
  • Ginger – 3 cm piece
  • Lime zest – from 1 lime

Method:

  1. Cut the chicken thigh into small cubes (or grind it), do the same with the sausage
  2. Finely chop garlic, onion, and ginger and sauté in oil until translucent
  3. Add the meat and sauté
  4. Sprinkle with smoked paprika, briefly sauté, then add tamari and honey
  5. Strain the mixture and let the excess fat released by the sausage drain
  6. Form the dumplings, dip the edges in egg white, then coat in sesame seeds mixed with sweet paprika
  7. Steam for about 3–5 minutes
  8. Serve with kimchačka (a strong, reduced kimchi soup, see below)

Kimchačka

Ingredients:

  • Kimchi – 300 g
  • Carrot – 1 piece
  • Sausage – the other half of the sausage :-)
  • Onion – 2 pieces
  • Garlic – ¼ bulb, approx. 20 g
  • Ginger – 50 g
  • Sweet paprika – 2 tsp
  • Tomato paste – 50 g
  • Dashi stock – 1.5 L (30 g Dashi-no-moto in 1.5 L water)
  • Sugar – 1.5 tsp (20 g)
  • Tamari to taste

Method:

  1. Sauté chopped onion, garlic, ginger, carrot, and sausage in oil
  2. The ingredients don’t need to be finely chopped, as the soup will be strained later
  3. Add the chopped kimchi
  4. Pour tomato paste and sweet paprika over the sautéed vegetables, sauté briefly
  5. Add Dashi stock, season with sugar, fish sauce, and tamari
  6. Simmer until all the flavor from the vegetables has infused into the stock
