Mandarin koji

We were very curious about this flavor because the combination of koji and mandarin didn’t occur to us. Luckily, we have Yuhi Che, our Japanese friend, who can create simple and interesting flavors with koji.

 

You can enjoy mandarin koji on its own as a dessert, or easily turn it into a sauce or dressing.

 

Ingredients:

  • Komekoji – 100 g
  • Mandarin –  100 g
  • Water – 100 ml

 

Method:

  1. Peel the mandarin and remove the white fibers from the segments
  2. Place all ingredients into a blender
  3. Transfer to a clean jar and leave at room temperature for 3–5 days (stir once a day), or ferment at 58–60 ℃ for 8–12 hours

 

For Sauce or Dressing

 

Ingredients:

  • Mandarin koji – 1 tbsp
  • Olive oil – ½ tbsp
  • Ground ginger – ¼ tsp
  • Salt – ¼ tsp

Method is simple – just mix all ingredients together 😊
