The simplest way to use koji. No fermentation is needed.
What is it good for? According to Yuhi:
- Improves gut health
- Has beautifying effects on the skin
- Helps recover from fatigue
Ingredients:
- Komekoji – 100 g
- Water – 500 ml
Method:
- Place the koji with water in a clean jar and leave it in the fridge for 8 hours, for example overnight
- In the morning, pour the water into a glass and drink it instead of plain water.
- You can also add honey, lemon, or both.
The same koji can be used three times, after which you can use it for cooking.
