Koji ice cream

Thanks to Yuhi Che, we can today offer you a recipe for koji ice cream, which doesn’t require any added sugar—the koji enzymes from the rice will naturally sweeten it.

You can easily make a sweet dessert that can be varied according to the available fruit or other flavors. We think it’s an ideal idea (not only) for summer! And many thanks to Yuhi!

 

Ingredients:

  • Your favorite fruit – 150 g (in the photos, one is with strawberries, the other with blueberries)
  • Komekoji – 150 g
  • Water - 50 ml

 

Method:

  1. Put the fruit into a blender and blend until smooth.
  2. Blend all other ingredients as well.
  3. Place in a clean jar and leave at room temperature for several days (stir once a day) until the koji softens, or 8 hours at 48-58 ℃.
  4. Pour into a mold and place in the freezer.

Repeat several times a week throughout the summer 😊
