Yuhi Che has prepared another recipe from her series of simple and very tasty ways to use koji in the kitchen. Sesame koji can be enjoyed as a dessert, or mixed with oil to create a perfect salad dressing. On top of that, it supports liver health, slower ageing, and lower cholesterol.
Ingredients:
- Black sesame – 25 g
- Komekoji – 100 g
- Cooked rice – 100 g
- Water – 200 ml
Method:
- Mix all ingredients together and place them into a clean jar
- Leave at room temperature for 3–4 days (stir occasionally) OR for 8 hours at a temperature of 48–58 °C
- For an extra smooth texture, you can blend it with a hand blender
