Koji with black sesame

Yuhi Che has prepared another recipe from her series of simple and very tasty ways to use koji in the kitchen. Sesame koji can be enjoyed as a dessert, or mixed with oil to create a perfect salad dressing. On top of that, it supports liver health, slower ageing, and lower cholesterol.

 

Ingredients:

  • Black sesame – 25 g
  • Komekoji – 100 g
  • Cooked rice – 100 g
  • Water – 200 ml

 

Method:

  1. Mix all ingredients together and place them into a clean jar
  2. Leave at room temperature for 3–4 days (stir occasionally) OR for 8 hours at a temperature of 48–58 °C
  3. For an extra smooth texture, you can blend it with a hand blender
