Roasted nuts with shiokoji

Shiokoji, a salty umami marinade, is one of our lesser-known products, yet it has a wide range of uses in the kitchen. Both in Michelin-level cuisine and at home.

 

Yuhi Che, our Japanese friend living in the Czech Republic, shows us that shiokoji can be used not only for meat but also for making homemade treats.

 

Ingredients:

  • Roasted nuts – 100 g
  • White Shiokoji – 2 tsp
  • Maple syrup – 1 tbsp

 

Method:

  1. Place the nuts in a pan (medium heat), add the maple syrup, and mix well.
  2. Add the white shiokoji and turn off the heat.
  3. Put in the oven at 120 ℃ for 20 minutes to dry (they will be sticky).
