Ingredients for the salad:
- Cooked rice – 300 g
- Red onion – 1 medium
- Tomatoes – 4 pcs
- Wakame – 3 tbsp
- Basil – to taste
- Sorrel – to taste
- Sesame seeds – to taste
Ingredients for the miso dressing:
- Aka soya or pea miso – 1 tbsp
- Rice vinegar – 2½ tbsp
- Sesame oil – 3 tbsp
- Grated ginger – ½ tbsp
- Pea tamari – 1 tbsp
- Water from soaked wakame – 2 tbsp
- Sugar – ½ tbsp
Method:
- Soak the wakame in water for 15 minutes.
- Finely grate the ginger against the grain.
- Finely chop the red onion.
- Mix all dressing ingredients together in a bowl.
- Cut the tomatoes into eighths and marinate them in the dressing.
- Place the rice at the bottom of the plate, top with the marinated tomatoes, wakame, and sprinkle with sesame seeds.
- Finish by tearing fresh basil and sorrel over the salad (coriander, oregano or dill work just as well).
