Cream Puffs
Ingredients:
- Water - 90 g
- Milk - 100 g
- Butter - 85 g
- Salt - 3 g
- Honey - 6 g
- All-purpose flour - 115 g
- Eggs - 190 g
Method:
- Heat water, milk, butter, salt, and honey
- Add flour and cook the dough (panade method)
- Cook over low heat for at least 5 minutes
- Let it cool slightly
- Transfer to a mixer and slowly add eggs
- Mix until the dough resembles a thick cream
- Fill into pastry bags
- Shape onto a baking tray lined with parchment paper
- Bake at 175 °C for about 25 min (fan oven)
- Let cool completely after baking
- Slice and fill with creams
Miso Powder
Ingredients:
- Aka soya miso
- Powdered sugar
- Cinnamon
Method:
- Spread miso into a thin layer, dry it in any dehydrator, then grind finely
- Mix dried miso (powder), powdered sugar, and cinnamon in a ratio of 1:3:1
Miso Caramel Cream
Ingredients:
- Granulated sugar - 200 g
- Butter - 80 g
- Cream - 100 ml
- Maldon salt - 0.5 tsp
- Nut paste (peanut) - 1 tsp
- Aka soya miso - 1 tsp
Method:
- Melt sugar into caramel, add butter and cream
- Add miso, nut paste, and a pinch of Maldon salt to the melted caramel
- If the mixture is too runny, cook it a little longer or add 1 tbsp cornstarch and cook while stirring
- Cool and fill into a pastry bag
Vanilla Cream
Ingredients:
- Cream 31% - 380 g
- Vanilla pod - 1 pcs
- White chocolate - 150 g
- Mascarpone - 100 g
- Gelatin - 3 sheets
Method:
- Soak gelatin in cold water for 10 min
- Heat cream and infuse with vanilla (a few minutes)
- Add gelatin, pour over chocolate with mascarpone
- Mix, cool, and fill into a pastry bag
