Miso onion soup with chips and oil

We have another fantastic and original recipe from the Entrée restaurant in Olomouc, this time by Daniela Bystrická, and it’s really worth trying.

Miso Onion Soup

 

Ingredients:

  • 2.5 kg onions
  • 3 l chicken stock
  • 250 ml white wine
  • 100 ml Verjus
  • 150 g chickpea miso
  • 50 g garlic
  • 1 bunch thyme
  • 2 g black pepper
  • 15 g salt
  • 100 g oil

 

Method:

  1. Cut the onions in half and slice thinly
  2. Slowly sauté in oil until golden
  3. Add thyme and thinly sliced garlic, sauté briefly
  4. Pour in wine and let the alcohol evaporate
  5. Add stock, miso, bring to a boil, and lightly reduce
  6. Stir in Verjus, season with salt and pepper

 

Serve with a piece of mature Olomouc cheese, a slice of raw mushroom, and a grissini dough chip with thyme oil.

 

Grissini Dough Chips

 

Ingredients:

  • 400 g plain flour
  • 180 g water
  • 60 g oil
  • 15 g salt
  • 10 g yeast

 

Method:

  1. Dissolve yeast in lukewarm water, then mix with flour
  2. Add oil
  3. Add salt while kneading the dough
  4. Roll the dough into thin sheets
  5. Bake at 180 °C until golden (about 8 min)
  6. After baking, brush with thyme oil, sprinkle with fresh thyme and salt

 

Thyme Oil

 

Ingredients:

  • 100 g thyme
  • 200 g oil

 

Method:

  1. Heat oil to 85 °C
  2. Blend with thyme for 3 minutes
  3. Strain through a cloth
  4. Let it drip slowly
