Pork belly marinated in shiokoji

Martin Baránek from the Entrée restaurant in Olomouc has prepared an almost unbelievable recipe this time. A homemade classic elevated to true culinary art.

While it’s not suitable for vegetarians and you’ll need to start preparing Sunday lunch as early as Thursday, we’re sure you won’t regret it.

 

Pork Belly


Ingredients:


Method:

  1. Debone the pork belly
  2. Lightly salt it
  3. Rub with shiokoji
  4. Vacuum seal or wrap in cling film and let marinate for 2 days
  5. After two days, rinse the belly
  6. Wrap in cling film again, leaving the sides open
  7. Then wrap in foil, again leaving the sides open
  8. Bake for 8 hours at 88°C using a steam-bake combination
  9. After baking, unwrap and, while still warm, place skin-side down in a dish lined with parchment paper
  10. Weigh it down to press and flatten the skin
  11. Let it cool this way, preferably overnight in the fridge
  12. Slice into 1 cm thick pieces and pan-fry until golden

 

Cucumber and Daikon Radish Salad


Ingredients:

  • Daikon radish – 1 piece
  • Cucumber – 1 piece
  • Fresh lime juice – 160 ml
  • Rice vinegar – 160 ml
  • Mirin – 400 ml
  • Salt – 4 g
  • Kombu – 15 g


Method:

  1. Peel the daikon and slice into rounds
  2. Slice the cucumber into rounds
  3. Reduce the mirin by half
  4. Add vinegar, lime juice, and salt, and bring to a boil in a pan
  5. Remove from heat, add kombu, and let infuse for 30 minutes
  6. Pour the marinade over the sliced daikon and cucumber
  7. Let cool and marinate thoroughly
  8. After straining, save the marinade for the sauce

 

Sauce for the Pork Belly


Ingredients:

  • Chili – 20 g
  • Ginger – 20 g
  • Shallot – 50 g
  • Garlic – 20 g
  • Starch – 15 g
  • Sugar – 5 g
  • Black and white sesame seeds – 20 g
  • Pea tamari – 100 ml
  • Sesame oil – 50 ml
  • Pickling liquid from the daikon and cucumber


Method:

  1. Finely dice the ginger, chili, garlic, and shallot (brunoise)
  2. Sauté in oil
  3. Add the pickling liquid from the marinated cucumber and daikon
  4. Bring to a boil and let simmer for 15 minutes
  5. Add sugar, tamari, and sesame oil
  6. Thicken with starch
  7. Finally, stir in toasted sesame seeds
